Lecithin is classified as phospholipids and is one of the richest sources of essential nutrients: choline and inositol. both these nutrients are lipotropic factors playing an important role in the metabolism of fat in the liver and the emulsification of fat in the body. Lecithin is the main dietary source of choline in the form of phosphatidylcholine. Subsequent fosfatidocholini converted in the body into choline one of the most important B vitamins.
Apart from their role in the metabolism of fat, lecithin and choline are used by the body as structural components of cell membranes and to facilitate the passage of grease therethrough. Finally the choline precursor is important for the functioning of the nervous system, the neurotransmitter acetylcholine.
